Pachi. Welcome to Chef Pachi and Sesame Crusted Tuna Steak. Delicious. First thing
we’re gonna do is we’re gonna make our Pico de Gallo. We have
a half a cup of red onion, a 1/2 cup of tomatoes that have been deseeded and
peeled, 1/2 a cup of cilantro, minced really small, a tablespoon of rosemary, and
the juice of one lime; a pinch of salt and pepper and that’s it. Check out those
gadgets that are now available everywhere – there’s some beautiful colors
– to press the limes. They are very good because the lime goes upside down. Press
it until you have a lot of juice but don’t go completely to the end that way you
always have sweet and delicious lime juice without any bitterness. We mix our
pico de Gallo. This pico de gallo we can keep refrigerated for up to a week, if
it’s well covered. After we add the oil, cover it, refrigerate it, or set it aside
until you’re ready to serve. This is gonna blend all the flavors and it’s gonna be delicious. Now we’re gonna prepare our sesame crust.
It’s like a sesame breading with a half a cup of sesame seeds, 1/2 a cup of
mustard seeds, some rosemary that has been minced, about 2 tablespoons, and
that’s it. This is enough for about four servings or two large steaks. These steaks
are about half a pound each. So we add some sesame oil to our steak and then we
place it on top of the seeds. This is gonna make the breading or the crust
ingredients hold. Watch how I’ve cut my avocado first and
then I dice it into the plate; that way when I place it on the plate, I don’t
touch it, so it keeps in much better shape. Then I add our beautiful Pico de Gallo on top of it and I preheat my grill. This is a crepe grill but you can
use a panini grill, a crepe grill, a barbecue, anything. You preheat it to high
heat. Cook it for 1 minute on each side if you having a pan, or about 30 seconds
on each side, if you have a panini grill or a crepe grill. This is it. It’s gonna sear
the crust and the outside of the tuna. And then the red in the center is gonna be
pink and delicious, moist and tender. If you wanna cook it completely, it’s fine. Go ahead, it’s gonna
be delicious. The crusted seeds become aromatic and delicious slightly toasted
as the tuna cooks. Remember joy this delicious meats. They are all great for
