Paleo Zucchini Coconut Pancakes – Easy and Quick Breakfast Idea


Hi guys, today I’m going to show you how to
make these amazingly healthy, Paleo, grain-free and gluten-free pancakes. I used to miss pancakes
a lot when we first went Paleo, but these ones have totally satisfied my cravings. I
love making them on those mornings when I miss my mum’s food from my childhood. They’re
so easy to make. The exact ingredient list will be in the description box, but you’ll
need two zucchinis, some coconut flour, 3 eggs, some butter, and salt and pepper. We’re
going to start by grating the courgette with my wonderful old-fashioned grater. Yeah, that’s
quite hard work. And then we’re going to take the courgette, squeeze out any excess juice
just to make sure that it doesn’t collect all that water at the bottom of the bowl.
Once you get a full glass, then you can transfer it to a bowl, where you’re going to mix all
the ingredients. And then all the excess juice you can actually drink it. It’s super healthy
for you and tastes good, so that’s what I generally do. That’s delicious and super healthy.
Just look at that colour, it’s gorgeous. Next, we’re going to add the egg yolks, and give
it a bit of a stir, but just a little bit, and you can also prepare all of this mixture
in the evening, and then you just have to fry in the morning, so it doesn’t take that
long. Now it’s time to add the coconut flour and mix a bit as well. I love coconut flour.
It tastes so good and it’s so healthy for you. Next, we’re going to add the salt and
pepper, but it doesn’t want to come out, so I’ll have to use my fingers to get it out.
I guess there’s too much humidity in the house. And that’s the final mix. So it’s ready now
and just look how wonderfully green and fresh it looks. it’s honestly such a great great
breakfast and I absolutely love it. And then I’m going to just put some butter in the pan,
wait until it melts, and then distribute it evenly on my cast iron pan. Then I take one
tablespoon of the mixture and transfer it to the pan. I just make sure that it kind
of looks like a circle, but it doesn’t really matter. Then I do the same with all the others.
So now they’re all done, and I’ll leave it there just until the edges become kind of
brown. You need to make sure that you use enough butter because if there isn’t enough
butter, it will just stick to the bottom and it will be impossible to turn. So this is
the time when they’re ready. As you can see, they’re kind of getting brown around the edges,
so they’re definitely ready to be turned. Here they are, perfectly brown. Oh, I love
them so much. Just look at that! Beautifully golden, crunchy. Awww, I love this breakfast.
So this is the quantity you get from this recipe. It’s around 25 small pancakes. We
usually pair these pancakes with unsweetened Greek yogurt and it just balances everything
