Mediterranean Chickpea Salad | The Delicious Crescent

Hello this is Roxana from Today we are going to make chickpea salad
that is full of delicious flavors and textures. A healthy and filling meatless salad packed
with plant protein and fiber, that is irresistible! We start with making an aromatic salad dressing. We will need fresh squeezed lemon juice, I
prefer to use extra virgin olive oil, ground cumin, paprika, sumac, red pepper flakes if
you like, black pepper, some salt and grated garlic. You can make the salad dressing ahead of time. In fact you can make plenty of salad dressing
in a mason jar and have it handy for up to a week. Then mix all the salad dressing ingredients
very well. Then take some cooked and cooled chickpeas,
diced tomatoes, diced red bell pepper, chopped red onions, chopped parsley
and chopped green onions. The key is to use fresh herbs and vegetables. Then add some crumbled feta cheese. Half an hour before serving, add the salad
dressing with all the other ingredients. And toss it all together. Adjust the seasoning to your taste if needed. Remember that feta cheese is a salty cheese,
so adjust the amount of salt keeping that in mind. Set it aside at room temperature or in the
refrigerator for 20-30 minutes. You may serve the salad over a bed of mixed
salad greens and sliced radish. Spoon the salad over the fresh vegetables. Now this a simple, gluten-free, vegetarian
salad and makes a filling and satisfying meal. And then garnish with lemon slices, olives and
crumbled feta cheese. You can skip the feta cheese to make it vegan
and dairy-free. This is an incredibly tasty salad that is heart healthy
with high dietary fiber, which will make you feel full and is a great choice for weight
