How to Make SCD Friendly Almond Flour Muffins (Paleo and Keto friendly too)

hi guys welcome to hack your health I’m
Erica and today I’m going to show you how to make specific carbohydrate diet
friendly muffins using almond flour so these are the ingredients that you’re
going to need for the muffins: almond flour, honey,
blueberries, a whole lemon, vanilla, salt baking soda, eggs, and olive oil. So the
first step is to put two cups of almond flour into a small bowl. So now I need
half a teaspoon of baking soda, an eighth of a teaspoon of salt (so I’ll just put
in like a sprinkling of salt) and that’s it for the dry ingredients so I’m gonna
mix these up with a fork just so that the baking soda and the salt are
distributed well into the flour. so the next step is going to be separating the
eggs so I’m gonna put my egg whites in this smaller bowl which is my measuring
cup and then you just pass the egg yolk back and forth until the white is into
there and then with the yolk separate now I have my egg whites in one
container and my egg yolks in another we’re gonna take my hand mixer and beat
the eggs so once they start to peak that means that the little Peaks don’t fall
over that means that they’re done and this is just to create more air in the
muffins to make them more fluffy so now we’re gonna add a quarter cup of honey
then we’re gonna add two tablespoons of olive oil which pours very slowly. we’re
gonna add one teaspoon of vanilla. we’re gonna add the zest of one lemon so to
make lemon zest you just use the small side of your grater and grate off the outside of the lemon so
once your lemon is pretty much all un-zested just get the rest out and you cut
the lemon in half. if you see any seeds, remove them and then squeeze the juice
into them into this so now we’re going to mix all these ingredients all the wet
ingredients together just mix it the minimal amount because the more you mix
it the more it will pop the bubbles in the meringue (in the egg whites), so just
mix it until it’s evenly distributed and then add your dry ingredients so add
your dry ingredients a little bit at a time and once those are mixed in you can add
your blueberries so I used frozen blueberries make sure to let the
blueberries thaw out before you add them because then when it cooks
if you cook with frozen blueberries it will make pockets of uncooked batter
around them and this was about 3/4 of a cup of blueberries so now I’m going to
take my muffin tray and from previous experience this is going to make about 9
muffins so I’ll have a little bit left over so what I’m going to do is take a
piece of this butter wrapper that I’ve ripped off and grease the
muffin tins. this is what the batter looks like and I’m just gonna fill each
of these up 3/4 of the way full so this is about how full you want to make them
and I’ve preheated my oven to 350 degrees and I’m gonna bake them for
about 20 to 25 minutes so that’s how you make specific carbohydrate diet friendly
