Let’s cook goat with endives and olives, a traditional Cretan recipe, particularly from the area of Sfakia. After you have washed the endives well, cut them into large pieces and boil them for 5 minutes. Endives are related to radishes and are a very tasty vegetable. Heat the extra virgin olive oil and sauté the meat on medium heat for 8 minutes. Once golden brown, pour in the white wine. Add some water and cover the saucepan with the lid. Simmer for 30 minutes. Put the endives in the saucepan with the meat, stir and cover the saucepan again. Cook for another 20 minutes. Add the olives, salt and freshly ground pepper and cook for another 3 minutes. Serve the goat with endives and olives, hot as a main dish in a deep platter.
